hearty vegetarian chili

One of the biggest challenges that I've experienced with vegetarian recipes is how unfulfilling they can be. It feels like I eat enormous portions, only to have my tummy feel less than satisfied. Or sometimes I'll use a meatless substitute to add "volume" to a meal...but I don't always like the processed nature of those. But this recipe for Sweet Potato Black Bean Chili was so filling and hearty - even my 6'5" manly-built fiance felt full! - and it was so ridiculously easy to prepare!

(starting with chopped veggies)

(adding spices and black beans)

(putting all that in the not-really-sideways crockpot with some vegetable broth)

(spooning it into a bowl six hours later, ignoring the muted colors and enjoying!)

The only change I made was to leave out the fire-roasted tomatoes (since I'm not a fan) - but in the comments section on the original recipe, someone mentioned adding tomato paste. I may try that next time (because there will definitely be a next time!), to see how that changes the flavor or texture. Wildcat Guy and I also talked about trying it with shredded rotisserie chicken - either mixed in or on the side - for a little something extra. Or not. Because it really is that good without any meat.

Now all we need is some cooler weather - because something this hearty and yummy will be perfect for fall and winter!

i love things spicy :) and i do get that craving for meat, as if we're still hungry but bloated at the same time... This looks rustic yummy though :D
